When buying new okra, start looking for youthful pods free of lumps, tender but not soft, and no longer than 4 inches.
For making okra, you will need:
- 500g Okra
- 2 Onions
- 180g Oil
- 3 cloves garlic
- 2 Tomatoes
- 2 tsp of curry powder
- 1/2 tsp of turmeric
- 1/2 tsp of salt
Slice the onions finely and fry lightly in oil. Liquidize the rest of the onion, garlic, and tomatoes. Add this puree into the skillet. Fry gently for 5 minutes. Serve with rice along with a meat stew, for example, protein.
